Wagyu Oxtail Stew
A stew that is filled with flavor and is a warm winter dish to serve your family.

1 package or (3lbs) Premium Dakota Beef Wagyu Oxtail

1/4 cup of butter

3 Celery stalks sliced

4 Carrots sliced

1 onion diced

2 cloves of garlic (optional)

2 Tablespoons of all-purpose flour

1 cup of dry red wine

1 can of tomatoes in puree (14.5oz) 

1 teaspoon of salt

1/4 teaspoon of black pepper

1/4 teaspoon of dried thyme

1/4 teaspoon of rosemary 

3 cups of beef broth

Let's get to cooking....

Heat oven to 350 degrees


Rinse and pat dry Wagyu oxtail  

    In a large pan (I used Cast-iron) melt 1/4 cup of butter in pan in oven. 

    Add the oxtail. Leave in oven until brown. 


    While the oxtail is browning dice carrots, celery, and onion. 

    Brown and mix

    Remove the oxtail from the oven and sear on stove top. 

    Remove the oxtail from the pan and place it on a plate to the side. 

    Add the diced carrots, celery, and onion. Let the vegetables soak up the oils from the oxtail until softened. 

    Once they are softened stir in the flour, red wine, seasonings, and tomatoes. 

    Add the oxtail to a Dutch oven. 

    Pour the delicious smelling vegetables over the oxtail and add beef broth. 

    Place in the Dutch oven in the stove and let it continue to cook for 3 1/2 hours.
